Why Is It Toxic?
The flesh of the Greenland shark is flooded with trimethylamine oxide (TMAO) and urea. Basically, because the shark doesn’t have a urinary tract like mammals, it stores “urine” in its tissues to balance the salt in the water.
Eating it fresh is essentially like drinking a cocktail of cleaning fluids. The concentration of chemicals is high enough to be considered a potent poison.
